🍷 2 tbsp balsamic vinegar
🍅 1½ tbsp tomato paste
🌾 ¼ cup all-purpose flour
🍷 2 cups dry red wine
🥣 2 cups beef broth & 2 cups water
🌿 1 bay leaf & ½ tsp dried thyme
🧂 1½ tsp sugar
🥕 4 large carrots, peeled & cut into chunks
🥔 1 lb baby Yukon potatoes, halved
🌿 Fresh parsley for garnish

Directions:
1️ Preheat oven to 325°F** and set the rack in the lower middle position.
2️ Pat beef dry, season with salt & pepper.
3️ In a large Dutch oven, heat 1 tbsp olive oil over medium-high heat. Brown beef in batches (about 5 minutes per batch). Set aside.
4️ Add onions, garlic & balsamic vinegar, scraping up browned bits. Stir for 5 minutes.
5️ Add tomato paste; cook 1 minute. Return beef & juices to the pot, then sprinkle with flour. Stir for 1-2 minutes.
6️ Add red wine, beef broth, water, bay leaf, thyme, and sugar. Stir well and bring to a boil.
7️ Cover and braise in oven for 2 hours.
8️ Remove from oven, add carrots & potatoes, and return for another hour.
9️ Adjust seasoning and serve warm, garnished with fresh parsley.
