Cooking For The Family! – The Cookbook!

Cooking For The Family, my new cookbook. The book will be available for sale February 1 2021. It’s 180 pages filled with my family’s favorite recipes that I’ve been preparing for years, plus wonderful inspirational quotes about food and cooking and lots of food cooking tips. Here’s the first recipe in the book.

STEAMED GARLIC CLAMS

Ingredients:
5 tablespoons unsalted butter
¼ teaspoon red pepper flakes
3 small cloves garlic, minced
¼ teaspoon salt, plus more as needed
1 cup dry white wine
4 pounds littleneck clams, scrubbed
Juice of 1 medium lemon
Freshly ground black pepper
1 cup fresh parsley leaves, thinly sliced
1 medium lemon, cut into wedges

Directions:

  1. Melt butter in a large pot, with a tight-fitting lid over medium heat.
  2. Add red pepper flakes, garlic, salt, cook until fragrant, about 30 seconds.
  3. Pour in wine and raise the heat until it comes to a simmer (avoid a boil).
  4. Add the clams, cover, adjust heat to to active simmer. Cook until the majority of the clams open, about 6 to 9 minutes depending on the size of the clams. Give pot a good shake about halfway through to move the clams around. Discard any that do not open.
  5. Remove from the heat.
  6. Stir in the lemon juice, seasoning with salt and pepper as needed, top with herbs.
  7. Ladle the clams into bowls. Pour the remaining liquid over the clams, sprinkle the remaining herbs.
